Tsonami Session IPA (Seasonal)
Our Sesssion IPA is a balanced lower alcohol ale with the intense hop character of a true IPA. The Citra hop incorporated in this brew is intensely fruit forward with grapefruit zest in the aroma. On the palate Simcoe and Amarillo create an herbal tangerine note. With a smooth mouthfeel, this beer hits you with a Tsonami of hop flavor for your entire drinking session.
Subliminal Gold IPA (Seasonal)
This IPA features a newer array of hops, bittered with Mosaic and finished with Hallertauer Blanc. Distinct flavors of tropical fruit in a crisp and refreshing golden malt backbone. Subliminal Gold has the aroma of dank orange peel to zesty lime-like citrus in our version of a Golden IPA. Hallertauer Blanc is a new hop from the noble hop growing region of Hallertau in Germany, and offers a bright floral bouquet, even white wine like with a spicy herbal characteristic that balances the beer. Look also for notes of gooseberry and/or passion fruit.
SonomaComa Double IPA
Wonderful aromas of forest floor with hints of fresh evergreen and citrus hops. Malty sweetness with flavors of honey and caramel give backbone. Due to extra conditioning time and natural carbonation the mouthfeel is silky smooth. There is a maximum hop flavor that is not overpowering and balanced. This ale is conditioned with Pasteur Champagne yeast that enhances the body of the beer and adds complexity.
Brutus XX Bitter Pale Ale (Seasonal)
Our latest version of a pale ale is extra strong and dubbed Brutus XX Bitter, where XX means Extra Extra Bitter! To balance this heavily hopped pale ale, we used both un-malted and malted oats from Simpson's in Scotland. The Golden Naked Oats create a unique and subtle nutty flavor with subdued grainy sweetness. The final beer develops a malty aroma similar to a pie crust with a berry fruit-like flavor with a mouth feel that finishes round and silky smooth
NomaCloud Triple IPA (Seasonal)
NomaCloud is a brew to celebrate our new location in the El Verano neighborhood of Sonoma. The bouquet or nose of the beer is a cloud of dank and pungent hop aroma. The front palette is slightly sweet with a twist of tangerine that helps keep the hop-malt balance in check. Heavy use of both malted and rolled Oats bring forth a smooth and pleasantly round mouthfeel. This keeps the body of the beer together until the bitter-sweet finish leaves you wanting more all over again. This exclusive, seasonal beer is dually fermented with our house Ale yeast and finished with Pasteur Champagne yeast for an elevated alcohol level over 9% as expected in a Triple IPA.
